#leftoverlunches Cream of mushroom and spring onion soup

Rather than throw out some lovely leftover veg and salad (and a tiny bit of cream) I decided to cook up some tasty soup for James’s and I’s lunch tomorrow.

Step 1) Chop up your left over mushrooms and spring onions

Step 2) Cook them in a pan with butter, black pepper, a bit of salt and a dash of soy sauce.

Step 3) Measure out 1/2 a pint of milk and your left over double cream.

Step 4) Whizz it all together!

And voila! Soup for tomorrow!
